COATING CRUMBS FOR MEAT, FISH & NON-MEAT PRODUCTS

Extrusion Co produces a wide range of coating crumbs suitable of all types of meats and fish servings. Our crumbs come in a variety of sizes from 40 thou through to a larger 200-300 thou ‘J Crumb’ or Panko style crumb. We can also customise our crumb options to meet your colour requirements to achieve various shades of golden, yellows and oranges, through to soft and dark browns, multicolour mixes, crust colour and fleck.

Apart from the traditional wheat flour based crumbs we can produce a potato flavoured crumb and a ‘No Gluten’ (rice/corn mix) based crumb in various sized options. See our Product section.

Due to our manufacturing process we offer consistency and quality in our crumb supply and more importantly, complete confidence in the food safety profile for all of our crumb products. This is especially important when working with raw meats, especially chicken and seafood. Depending on your frying requirements we can also offer crumb options with a small percentage of dextrose to assist in achieving an even browning when cooking.

Our coating crumbs are regularly used in other applications such as fried cheese balls, potato dauphines, coated mushrooms and other deep-fried vegetable delights. Please contact us if you have specific requirements in this area.

SAUSAGE MEAT & STUFFING'S

Extrusion Co can offer and excellent range of crumbs or rusk to be used as a complete stuffing base or as a binder for sausage making. Products on offer include;

Rusk – medium coarse clean white crumb 80 thou size, an industry standard and a favourite amongst sausage makers and sausage roll fillers with a very clean label and no unnecessary additives.

Stuffing Crumb with characteristic baked bread odour, fine typically 40-100 thou crumb with a fleck of crust colour. This can also be produced as just a plain white crumb if required.

‘No Gluten’ – we have an excellent option with our 80  thou corn or rice based crumb for those clients wanting to produce a sausage or a stuffing base that is made from gluten free materials.

One of the major advantages of using extruded crumb, is not only the food safety margin of a fully pasteurised product, over using a recycled bread crumb product – but also the binding properties of this crumb. With the open cell structure created by the extrusion based cooking process, this imparts greater water holding and binding properties in the crumb.

Experienced sausage makers will be well aware that making sausages or stuffing’s using a baked crumb, the mix will start to exhibit water release known as ‘syneresis’ after about 24 hours. With the superior water holding properties of extruded crumb this allows the sausage maker the option to use less rusk/crumb as a binder or to increase the overall amount of water added to the mix.

Please note when using our extruded crumb for the first time on a 1:1 replacement for baked crumb – as general guide you will need to add 30% more water.

Please note also; we do not sell proprietary stuffing or sausage mixes (i.e. added herbs spices etc ) – we leave this to your individual mastery with the confidence that you can create with the cleanest and safest of crumb/rusk products available.

PUDDINGS - BREAD BASED

Traditional bread and butter and steamed puddings are ‘kiwi classics’ and as many home economists know, there is no better way to ‘up cycle’ yesterday’s now stale bread. When stale bread is not enough, Extrusion Co’s extruded bread crumb is perfect for the commercial bakery or catering kitchen to make this kiwi classic dessert on a grand scale, providing consistency and ‘clean label’ ingredients.

Given the advantages of extrusion based cooking production, we can offer our clients a genuine ‘clean label solution’ i.e. an ‘additive free’ product that is effectively just; ‘wheat flour, salt and yeast’. Depending on the size of your operational needs, we can supply these products in 15 kg multiwall bags (35-40 bags to a pallet) or in IBC bags, normally 400-500 kg, specifically designed for hopper -bulk handling systems.
